This serves 2:
Ingredients:
- 2 portions of Soba Noodles
- 2 Pak Choy
- 1 Red Pepper
- 1 Cup of Edamame Beans
- 1 Pack of Tofu
- 2 Spring Onions
- Handful of Coriander
- 1 Tbsp Sesame Seeds
- 1 Tbsp Sesame Oil (for the tofu marinade)
- 1 Tbsp Soy Sauce (for the tofu marinade)
- 1 Tsp of Sriracha (for the tofu marinade)
For the dressing
- 2 Tbsp Tahini
- 2 Tbsp Soy Sauce
- 1/2 Tsp of Vegan Honey
- 2 Tbsp Sesame Oil
Method:
1. Start by preparing your Tofu, press out all of the liquid and cut it into squares. Add your Sesame Oil, Soy Sauce and Sriracha into a bowl and mix together. Add your Tofu to the bowl and leave to marinade
2. Cook your Soba Noodles
3. Prepare your Pak Choi and Red Pepper and fry with a splash of sesame oil
4. Once your Soba Noodles have cooked, drain the water, add an ice cube and a splash of Sesame Oil and leave to one side to cool
5. Once your Pak Choi and red pepper have cooked, remove to one side and leave to cool
6. Crisp up your Tofu in a frying pan with all the marinade, turning it frequently to make sure each side is crispy
7. Steam or boil your Edamame Beans
8. Once everything is cooking prepare your garnishes, chop your Coriander and your Spring Onion
9. Mix together your dressing in a separate bowl
10. Take your Tofu off the heat and drain your Edamame Beans, cool the beans by rinsing them with cold water
11. Build your bowl with noodles, Pak Choi, Red Pepper and Edamame Beans. Then add your crispy Tofu on the top and garnish with Coriander, Spring Onions, Sesame Seeds and your delicious dressing
