Sticky Sesame Tamari Mushroom Buddha Bowl

Serves 2:

Ingredients

ChicP Velvet Hummus

Closed Button Mushrooms

2 TBSP Sesame Oil 

2 TBSP Soy Sauce

1 TSP Vegan Honey

Sesame Seeds

2 Sweet Potatoes

Rocket

Asparagus

Cucumber

Lime

Smoked Paprika

Salt 

Pepper

Coconut Oil

 

Method:

1. Pre-heat your oven to 200C

2. Peel and slice your sweet potato and add to a baking tray with a drizzle of Coconut Oil, Salt, Pepper and Smoked Paprika - roast for 20 minutes

3. Wash and dice your mushrooms and add to a frying pan with sesame oil, soy sauce, a drizzle of Vegan Honey and 1/2 the fresh lime juice - Heat on a medium heat until cooked and sticky - Stir through with a sprinkle of Sesame Seeds

4. Steam your Asparagus

5. Dice your Cucumber

6. In a bowl add your rocket 

7. Once your sweet potato has been cooked, squeeze over the other half of the lime juice 

8. Build your bowl with the mushrooms, asparagus and cucumber! Finish off with a large TBSP of Hummus
